Each bite of this Roasted Fingerling Potato is packed with luscious flavors that you are going to love. Ready in less than an hour, this recipe is definitely a must-try!
Ingredients:
3 tablespoons lemon juice
3 garlic cloves, minced
½ teaspoon pepper
3 tablespoons olive oil
2 pounds fingerling potatoes any variety
1 tablespoon dried oregano
½ teaspoon salt or to taste
1 ½ c vegetable broth
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Wash the potatoes under running water and remove any dirt.
3. Slice the washed potatoes lengthwise.
4. Add the potato slices onto a 12×17-inch baking sheet and arrange them in a single layer.
5. Add olive oil, salt, and pepper over the potato slices, then toss until well coated.
6. Place the baking sheet inside the preheated oven and bake the potatoes for about 15 minutes or until done.
7. Add garlic, oregano, lemon juice, and vegetable broth into a mixing bowl. Stir until well blended.
8. Pour the broth mixture into the pan over the potatoes.
9. Bake for 20 to 25 more minutes or until the potatoes are fork-tender and the sauce has dried up.
10. Remove the potatoes from the oven, then turn them. Broil the potatoes for another 5 minutes or until brown.
11. Remove from the oven, then sprinkle freshly chopped basil on top to garnish.
12. Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days.
Reheat in the oven or on the stove.
Make sure to use fresh and new potatoes for the best result.
