This potato recipe is superb! If you are a huge fan of cheese, then you have got to give this recipe a try! Feel free to add more ingredients if you prefer. By the way, for an extra kick, try adding chilli powder. Oh, man, chilli powder takes this dish to the next level! Also, be very generous with the amount of cheese that you are going to add. Enjoy!
Ingredients:
3 lbs (1.5 kg) baby red potatoes, washed and quartered
1/4 c (60ml) olive oil
6 large cloves of garlic finely chopped or minced
Salt and fresh cracked black pepper
1 tbsp Italian seasoning
3/4 c fresh grated Parmesan cheese
1/2 c unsalted butter
Fresh chopped parsley for garnish
1/2 c crispy bacon bits (optional)
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray on a large baking sheet.
Step 3: Place the red potatoes into a bowl of boiling water and parboil them for about 8 minutes.
Step 4: Add the Parmesan cheese, 1/4 cup of olive oil, herbs, garlic, salt, and pepper into a large mixing bowl. Stir until well combined.
Step 5: Add the parboiled potatoes and toss until well coated with the mixture.
Step 6: Place the coated potatoes onto the greased baking sheet.
Step 7: Place it inside the preheated oven and bake for about 25 minutes or until done. Make sure to flip the potatoes halfway through.
Step 8: Meanwhile, place the butter inside the microwave and heat until melted completely.
Step 9: Remove the potatoes from the oven and drizzle them generously with the butter sauce.
Step 10: Add the bacon bits and toss until the potatoes are well coated.
Step 11: Serve and enjoy!
