Ingredients:
For the Roasted Sweet Potatoes
2 tbsp extra virgin olive oil
2 lbs. sweet potatoes about 3 medium pieces
3/4 tsp kosher salt
1 tbsp honey or pure maple syrup optional
Seasonings of Choice* (optional; we usually keep it simple with black pepper)
1 tsp chilli powder
1/4 tsp chipotle chilli powder
1/2 tsp ground cinnamon
1/4 tsp ground black pepper
Directions:
1. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
2. Line with parchment paper a rimmed baking sheet.
3. Scrub the potatoes and use paper towels to pat them dry.
4. Slice each potato into 1-inch-thick pieces.
5. Arrange the potato slices in the middle of the prepared baking sheet.
6. Drizzle honey and oil over the potato slices. Sprinkle salt on top as well, then toss until well coated.
7. Arrange the potatoes again in the prepared baking sheet. Make sure to leave a small space between each potato.
8. Place them inside the preheated oven and bake for about 20 minutes.
9. Remove from the oven, flip the potatoes.
10. Put them back inside the oven and bake the other side for another 20 minutes.
11. Remove from the oven and allow them to cool for a few minutes at room temperature.
12. Serve warm and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 5 days.
