Ingredients:
1 1/4 lb boneless skinless chicken breasts
1 tbsp olive oil
salt and pepper to taste
2 tsp fresh rosemary leaves minced
3 tbsp butter melted
1 1/4 tsp minced garlic
1/4 c chicken broth
2 tbsp lemon juice
1 tbsp chopped fresh parsley
lemon slices and rosemary sprigs for serving optional
cooking spray
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Season with salt and pepper on all sides of the chicken breasts.
Step 3: Place a large pan on the stove and turn the heat to medium-high.
Step 4: Add olive oil and allow it to become hot.
Step 5: Put the chicken breasts into the pan with the hot oil. Cook each side of the chicken for 5 minutes or until they turn golden brown.
Step 6: Remove the chicken breasts from the pan to a greased baking dish.
Step 7: In a mixing bowl, add the butter, garlic, chicken broth, rosemary, and lemon juice. Stir until well combined.
Step 8: Pour the mixture on top of the chicken breasts and spread it evenly.
Step 9: Place the baking dish inside the preheated oven and bake for about 25 minutes or until done.
Step 10: Remove from the oven and spoon the juices on top of the chicken.
Step 11: Garnish with parsley.
Step 12: Serve and enjoy!
