Ingredients:
1 tbsp oil
1 1/2 pounds bone-in and skin-on chicken thighs (4-6 thighs)
salt and pepper to taste
1 onion, diced
20 cloves garlic, peeled
2 tsp fresh thyme, chopped (or 1 tsp dry thyme)
2 tbsp flour
1 c chicken broth
1/2 c Asiago cheese (or Parmesan), grated
salt and pepper to taste
Directions:
1. Place a large skillet on the stove and turn the heat to medium-high.
2. Add oil and allow it to become hot.
3. Season the chicken thighs with salt and pepper.
4. Put the chicken thighs into the hot oil and sear each side for about 5 minutes or until brow.
5. Remove from the skillet onto a clean plate.
6. In the same skillet, add garlic and onion. Saute until aromatic and translucent.
7. Add flour and thyme, then cook for about a minute.
8. Pour in the broth and scrape the bottom to get the brown bits.
9. Add the Asiago sauce, salt, and pepper. Stir until well blended.
10. Put the chicken, then cover the skillet.
11. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
12. Transfer the skillet inside the preheated oven. Roast the chicken thighs for about 15 minutes or until done.
13. Remove from the oven and allow them to cool for a few minutes at room temperature.
14. Serve and enjoy!
