Ingredients:
For The Meatballs
2 tablespoons olive oil
½ teaspoon salt
1 garlic, grated
¼ c breadcrumbs (I used Panko)
1 teaspoon grounded black pepper
1 teaspoon Worcestershire sauce
500g ground beef
½ onion, grated
1 tablespoon tomato ketchup
For Gravy
2 c beef stock
2 tablespoons plain flour
1 tablespoon BBQ sauce
1 garlic, grated
2 tablespoons butter
1 large onion, sliced
½ teaspoon freshly cracked black pepper
Salt to taste
1 teaspoon smoked paprika
1 tablespoon tomato ketchup
For Mashed Potatoes
4 tablespoons salted butter
Salt and black pepper to taste
½ c milk (I used low-fat milk)
5 large potatoes, peeled and boiled till tender
Directions:
1. In a large mixing bowl, add all the ingredients for the meatballs except for the olive oil. Use your clean hands to mix everything until well combined.
2. Form the mixture into 1-inch balls.
3. Place a large skillet on the stove and turn the heat to medium-high.
4. Add olive oil and allow it to become hot.
5. Add the meatballs and cook until done. Transfer the meatballs onto a clean plate.
6. Add butter into the empty skillet and allow it to melt.
7. Add the onion, then sauté until soft.
8. Add the garlic and 2 tbsp of flour. Cook for a minute until aromatic.
9. Add the beef broth gradually and whisk every addition until well blended. Make sure to scrape the bottom of the skillet to get the browned bits. Simmer for 3 minutes or until the texture of the sauce becomes thick.
10. Add the BBQ sauce, paprika, and tomato ketchup. Stir until well blended. Sprinkle salt and pepper to taste.
11. Add more broth if the texture of the sauce becomes too thick.
12. Put the meatballs back into the skillet, then toss until well coated by the delicious sauce. Remove from the heat.
13. Meanwhile, add the boiled potatoes into a large bowl, then mash them.
14. Add butter, milk, pepper, and salt. Stir until well blended.
15. Spoon some of the mashed potatoes onto a serving plate.
16. Add some meatballs on top, then pour the gravy all over.
17. Serve right away with steamed broccoli. Enjoy!
