Salmon Avocado Salad:
4 c baby spinach
2 tomatoes chopped
1 avocado diced
1 cucumber peeled and sliced
1/4 c red onion chopped
2 tbsp olive oil
2 salmon filets
Salt and pepper to taste
1 recipe lemon vinaigrette
Step 1: Place a large pan on the stove and turn the heat to medium-high.
Step 2: Add in the olive oil and allow it to become hot.
Step 3: Season with salt and pepper the salmon fillets.
Step 4: Cook the salmon in the hot oil for about 4 to 5 minutes.
Step 5: Flip the salmon and cook the other side for another 2 minutes or until opaque but the middle is still soft.
Step 6: Split the rest of the salad ingredients between two serving bowls.
Step 7: Top each bowl with the salmon fillets.
Step 8: In a small mixing bowl, add all the dressing ingredients and stir until well combined.
Step 9: Drizzle the dressing on top of each bowl.
Step 10: Serve and enjoy!
Store the leftover dressing inside the fridge.
