Ingredients:
1/3 c pesto (click for my recipe or use your fav jarred variety)
1/4 tsp garlic powder
1 tbsp olive oil
Flour for dredging
1 lb. of fresh salmon
8 oz. of uncooked pasta
1 tbsp butter
1/4 c heavy/whipping cream
1/3 c chicken broth or dry white wine
Salt & pepper to taste
Freshly grated Parmesan cheese optional
1/2 tsp lemon juice, optional
Directions:
1. Place a large pot with water on the stove and turn the heat to high.
2. Add the pasta and a bit of salt, then cook for a few minutes until al dente. Drain and rinse with cold water to stop the cooking process.
3. Season the salmon with salt, pepper, and garlic powder. Toss with flour until well coated.
4. Place a skillet on the stove and turn the heat to medium-high.
5. Add butter and oil, then allow them to become hot.
6. Add the salmon, then cook each side for 3 minutes or until golden brown. Transfer the salmon onto a clean plate.
7. In the empty skillet, pour the broth and pesto. Stir until well blended and make sure to scrape the bottom of the skillet to get the browned bits. Simmer for about 30 seconds over medium heat.
8. Add lemon juice and cream, then stir until well mixed. Simmer for one more minute.
9. Put the salmon, then break it into small pieces.
10. Turn the heat down to low, then simmer for about 5 minutes or until the texture of the sauce becomes thick.
11. Add the cooked pasta, then toss until well coated by the delicious sauce.
12. Sprinkle grated Parmesan cheese on top.
13. Serve and enjoy!
Notes:
Garnish with your preferred herbs.
Make sure to use cream and not milk.
