Ingredients:
For the Chicken:
2 tablespoons Great Value Organic Extra Virgin Olive Oil, divided
1-pound boneless skinless organic chicken breasts
1/2 teaspoon Great Value Organic Garlic Powder
1/2 teaspoon Great Value Organic Chili Powder
Salt and Pepper to taste
1/4 teaspoon Great Value Organic Cumin
For the Salsa Rice:
1 organic avocado, sliced
1 1/2 c Great Value Organic Long Grain and Wild Rice Blend
1 3/4 c Great Value Organic low sodium Chicken Broth
1 organic lime, juice of
1 tablespoon butter
1 1/2 c Colby Jack Cheese, shredded
15 ounces Great Value Organic Pinto Beans, drained
1 teaspoon Great Value Organic Cumin
2 tablespoons organic green onions, diced
1 c Great Value Organic Mild Salsa, plus extra for serving
1 teaspoon Great Value Organic Garlic Salt
Directions:
1. Season the chicken breasts with salt, pepper, cumin, chilli powder, and garlic powder. Make sure to rub each until well coated.
2. Preheat a large skillet over medium-high heat.
3. Add about a tbsp of olive oil and let it sizzle.
4. Add the chicken breasts and sear per side for 3 minutes or until they become golden brown.
5. Remove the chicken breasts from the skillet and transfer them onto a clean plate. Cover to keep them warm.
6. Melt 1 tbsp of butter into the same skillet.
7. Add the rest of the olive oil and let it become hot.
8. Add the rice, then stir and cook for a few minutes until a bit toasted.
9. Add the chicken broth, lime juice, drained pinto beans, garlic, salsa, and salt. Stir until well mixed. Bring the mixture to a boil.
10. Arrange the chicken breasts on top of the rice mixture.
11. Turn the heat down to low, then cover the skillet and simmer everything for 15 minutes or less.
12. Uncover and sprinkle the shredded cheese on top of the chicken breasts.
13. Cover it again and let the cheese melt completely.
14. Garnish with extra salsa, avocado slices, and chopped green onions.
15. Serve and enjoy!
