Easy, delicious, and simply the best! This Salsa Chicken Rice Skillet is my ultimate comfort food! Oh, man, you have got to give this one a try! Feel free to add more ingredients if you prefer. Enjoy!
Ingredients:
For the Chicken:
2 tablespoons Great Value Organic Extra Virgin Olive Oil, divided
1-pound boneless skinless organic chicken breasts
1/4 teaspoon Great Value Organic Cumin
1/2 teaspoon Great Value Organic Garlic Powder
1/2 teaspoon Great Value Organic Chili Powder
Salt and Pepper to taste
For the Salsa Rice:
1 1/2 c Great Value Organic Long Grain and Wild Rice Blend
1 organic lime, juice of
1 tablespoon butter
1 teaspoon Great Value Organic Garlic Salt
1 1/2 c Colby Jack Cheese, shredded
1 3/4 c Great Value Organic low sodium Chicken Broth
15 ounces Great Value Organic Pinto Beans, drained
1 organic avocado, sliced
1 teaspoon Great Value Organic Cumin
2 tablespoons organic green onions, diced
1 c Great Value Organic Mild Salsa, plus extra for serving
Directions:
1. Rub all sides of the chicken breasts with chilli powder, garlic powder, salt, pepper, and cumin.
2. Place a large skillet on the stove and turn the heat to medium-high.
3. Add 1 tbsp of olive oil and allow it to become hot.
4. Add the chicken breasts and sear each side for about 3 minutes or until they turn golden brown.
5. Remove the chicken breasts from the skillet onto a clean plate.
6. Add 1 tablespoon of butter into the same skillet and allow it to melt.
7. Add the rest of the olive oil and allow it to become hot.
8. Add the rice, then stir and cook until a bit toasted.
9. Add the chicken broth, lime juice, garlic, drained pinto beans, salsa, and salt. Stir until well mixed. Allow the mixture to boil.
10. Put the chicken breasts back to the skillet over the rice mixture.
11. Turn the heat down to low, then cover the skillet and simmer everything for about 15 minutes.
12. Remove the cover, then sprinkle the shredded cheese on top of the chicken breasts.
13. Cover it again and allow the cheese to melt completely.
14. Garnish with extra salsa, avocado slices, and chopped green onions.
15. Serve and enjoy!
