A satisfying, savory, undeniably delicious dish that will leave you salivating. Perfect sausage pepper and onion combination to serve to your loved ones. I am sure you will enjoy this as much as I do.

Ingredients
6 cups yellow onions (~1½ large onions), peeled and sliced into rings
2 large bell peppers (4 cups) sliced (about ¼ inch thick), I used 1 red and 1 yellow bell pepper
1 (12-ounce) package, fully cooked reduced-fat chicken or turkey sausages (4 sausages), I used Trader Joe’s garlic herb chicken sausages
Cooking spray
3 teaspoons olive oil, divided
¼ teaspoon dried oregano
¼ teaspoon dried basil
Salt and freshly ground black pepper, to taste
2 teaspoons fresh garlic, minced
1 tablespoon Balsamic vinegar
How to make Sausage Peppers and Onions
Step 1: Place the sliced onions and bell peppers in a large microwave-safe bowl. In the microwave, cook them on high for about 8 to 10 minutes or until soft.
Step 2: Slice the sausages into about 1/4-inch thick.
Step 3: Coat with cooking spray a large nonstick pan. Then, add the thinly sliced sausage and cook for about 5 minutes or until slightly brown, stirring often. Once done, transfer the sausages to a plate.
Step 4: Using the same pan, coat it again with cooking spray and add 2 teaspoons of olive oil. Stir in the cooked onions and bell peppers, oregano, basil, some salt, and pepper. Cook them over medium-high heat for about 10 minutes while stirring often until the vegetables are soft and a bit caramelized. In case the pan gets too dry, add another teaspoon of olive oil and 2 tablespoons of water.
Step 5: Then, add in the garlic and continue cooking for another minute while stirring until fragrant and soft.
Step 6: At this point, return the sausages into the pan and add in 1 tablespoon of balsamic vinegar.
Step 7: Combine and stir until well blended and continue to cook for 2 minutes more until warmed through.
Step 8: Once done, arrange the sausages, peppers, and onions on a platter. Serve with toasted bread or rolls and some mustard on the side. Enjoy!
Makes 4 main-course servings. Each serving 1¼ cup.
