These heavenly treats will surely make your day complete! I never thought that scallions would taste delicious when cooked into pancakes. Oh, man, you are so in for a treat. Enjoy!
Ingredients:
Scallion Pancakes
1 tbsp vegetable oil
3/4 c hot not boiling water
2 c all-purpose flour
extra flour for rolling pancakes
5 scallions sliced thinly (6-8 if using green part only)
1/2 tsp salt
Scallion Pancake Sauce
1/2 tsp toasted sesame oil
2 tbsp rice vinegar
1 clove garlic crushed
1 tsp scallions
1/4 tsp red pepper flakes
3 tbsp coconut aminos
Directions:
For the Scallion Pancakes:
1. Add salt and flour into a mixing bowl. Whisk until well mixed.
2. Pour in hot water, then stir until well mixed.
3. Use your clean hands to mix the dough further. Add more water or flour if needed.
4. Shape the dough into a ball, then cover with a wet towel and allow it to rise for about 30 minutes at room temperature.
5. Slice the scallions into thin pieces.
6. Sprinkle a bit of flour onto a flat surface, then place the dough on it.
7. Slice the dough into your preferred sizes.
8. Form each dough slice into a ball, then brush it with a bit of oil.
9. Sprinkle the sliced scallions on top of the dough, then roll each until coated.
10. Gently press each dough to flatten it out.
11. Place a skillet on the stove and turn the heat to medium.
12. Add vegetable oil and allow it to become hot.
13. Add the pancakes and cook each side for about 2 minutes or until golden brown.
14. Remove the pancakes from the skillet onto a clean plate lined with paper towels to drain any excess oil.
15. Serve with the sauce and enjoy!
For the Sauce:
1. Add the rice vinegar, sesame oil, coconut aminos, red pepper flakes, and sesame oil into a mixing bowl. Stir until well blended.
2. Place it inside the fridge to chill while you cook the pancakes.
Notes:
Make sure to use fresh scallions for this recipe.
Place any leftovers in an airtight container, then place them inside the fridge.
