Ingredients:
The Wine Mixture:
1 c Trapiche Wine red
1/4 c good quality balsamic vinegar
1/4 c oil
For the sheet pan:
2 pkg of Aidell’s Cajun Sausages slice into rounds
1 green pepper sliced thinly
1 red pepper sliced thinly
1 yellow pepper sliced thinly
1 orange pepper sliced thinly
1 sweet onion sliced thinly
2 shallots sliced thinly
1/4 c olive oil
Salt and pepper to taste
Directions:
For the Wine Mixture:
1. Add vinegar, wine, and olive oil into a cup. Whisk until well blended. Set aside for later use.
For the Sheet Pan:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Line with parchment paper a rimmed cookie sheet.
3. Slice the sausage into small cuts, then add them onto a sheet pan.
4. Slice the peppers, shallots, and onion as well, then put them onto the sheet pan with the sausage slices.
5. Season everything with salt and pepper, then toss until well combined.
6. Drizzle olive oil over the mixture.
7. Place it inside the preheated oven and bake for about 20 minutes.
8. Remove from the oven, pour the wine mixture over the mixture.
9. Put it back inside the oven and bake for another 30 minutes or until done. Make sure to check and stir from time to time.
10. Once the sauce becomes thick, you are ready to serve.
11. Remove from the oven and let it cool for about a minute.
12. Serve and enjoy!
