Ingredients:
Mashed Potato Topping:
4 tbsp butter
salt and pepper to taste
¼ to ½ c milk
2 lbs. potatoes, peeled and cut into big chunks
¼ c sour cream
Filling:
1 tbsp tomato paste
2 tbsp flour
1 lb. ground beef
2 cloves garlic, minced
½ c beef broth
2 c frozen peas, carrots, and corn medley
1 small onion, diced
1 tsp rosemary
1 bay leaf
½ tsp thyme
1 tbsp Worcestershire sauce
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Cook the potatoes in a pot with boiling water until tender. Drain.
3. In a large mixing bowl, sour cream, butter, salt, pepper, milk, and cooked potatoes. Mash until well combined.
4. Place a large skillet on the stove and turn the heat to medium.
5. Add the ground beef, then cook for a few minutes or until crumbly and brown.
6. Add the onions, then cook for a few minutes until soft. Discard any accumulated fat.
7. Add 2 cups of frozen veggies into the skillet, then cook for 5 minutes or until soft. Make sure to stir from time to time.
8. Add flour, then whisk and cook for a minute to remove the raw taste.
9. Add tomato paste, then cook for a minute. Stir until well blended.
10. Add rosemary, beef broth, bay leaf, Worcestershire sauce, thyme, and rosemary. Stir until well blended. Allow the mixture to simmer.
11. Turn the heat down to low, then cook for about 10 minutes.
12. Transfer the mixture to a 9×13-inch baking dish and spread it evenly. Discard the bay leaf.
13. Add the mashed potatoes over the meat and spread it evenly.
14. Place the baking dish inside the preheated oven and bake the pie for about 30 minutes or until done.
15. Remove from the oven.
16. Serve and enjoy!
