Ingredients:
12 oz. mushrooms, cleaned and thickly sliced
½ c all-purpose flour
½ tsp garlic powder
4 tbsp unsalted butter, divided
3 boneless, skinless chicken breasts, cut in half horizontally into cutlets
½ c dry white wine
2 large shallots, sliced thin
2 garlic cloves, minced
1 ½ c chicken broth, low sodium
½ tsp salt
1 tsp pepper
1 tsp Dijon mustard
2 large springs of fresh thyme
1 tbsp olive oil
½ c heavy cream
2 tsp cornstarch dissolved in 2 tbsp water or broth
Directions:
1. Use paper towels to pat dry the chicken breasts.
2. Cover each chicken breast with plastic wrap. Use a meat mallet to gently pound each chicken breast into thin pieces.
3. Add garlic powder, salt, pepper, and flour into a medium mixing bowl. Whisk until well incorporated.
4. Put a large skillet on the stove and turn the heat to medium.
5. Add 1 tbsp of oil and 2 tbsp of butter, then allow them to become hot.
6. Coat each chicken slice with the flour mixture, then shake off any excess.
7. Add the coated chicken pieces into the hot skillet, then cook each side for about 5 minutes or until they turn golden brown. Move the chicken onto a clean plate.
8. In the same skillet, add butter and allow it to melt.
9. Add the mushrooms, then sauté for a few minutes until soft and dry.
10. Add the shallots, then sauté for a few minutes until a bit caramelized or brown.
11. Pour in the wine, then scrape the bottom of the skillet to get the browned bits. Stir until well blended.
12. Add chicken broth, thyme, cream, and mustard. Stir until well blended. Allow the mixture to boil for a few minutes.
13. Add cornstarch and water mixture, then stir until well blended. Simmer for a few minutes until thick.
14. Put the chicken breasts back into the skillet, then toss until well coated by the delicious sauce. Simmer for about 2 minutes. Remove the thyme sprigs.
15. Taste, then add more salt and pepper if needed.
16. Remove the skillet from the heat.
17. Serve hot with noodles, rice, etc. Enjoy!
