4 tbsp butter
1 tsp fresh thyme
2 tsp sugar
4 tsp of balsamic vinegar
1 tbsp olive oil
1 c finely chopped onions
1/2 tsp garlic powder
4 small boneless, skinless chicken breasts (or thighs)
salt and pepper
1 c EACH: chicken broth AND heavy cream
A pinch of red pepper flakes
Directions:
1. Sprinkle garlic powder, salt, and pepper over the chicken breast. Toss until well coated.
2. Place a large skillet on the stove and turn the heat to medium-high.
3. Add oil and allow it to become hot.
4. Add the chicken, then cook for about 6 to 12 minutes or until golden brown. Transfer the chicken onto a clean plate.
5. In the same skillet, add butter and allow it to melt.
6. Add the onions, then cook for about 12 to 15 minutes or until they become caramelized.
7. Add balsamic vinegar, red pepper flakes, thyme, and sugar. Stir until well mixed. Simmer for a few minutes to cook the vinegar.
8. Add chicken broth gradually, then whisk continuously until well blended.
9. Turn the heat to high, then simmer the sauce for about 2 to 3 minutes to reduce its volume.
10. Reduce the heat to low, then add the cream and stir until well blended. Bring the mixture to a simmer.
11. Put the chicken back into the skillet, then toss until well coated by the delicious sauce.
12. Serve right away. Enjoy!
Note:
Add more broth if needed.
