Ingredients:
3 boneless, skinless chicken breasts, cut into 1″ chunks
1 tablespoon olive oil
2 medium carrots, peeled and chopped
1/2 onion, chopped
1 egg, lightly beaten
1 1/2 cup frozen peas
1 can refrigerated biscuit dough
3 tablespoons flour
2 cups chicken broth
2 tablespoons heavy cream
2 stalks celery, chopped
2 teaspoons fresh thyme
kosher salt
Freshly ground black pepper
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Place a large skillet on the stove and turn the heat to medium.
3. Add oil and allow it to become hot.
4. Add the chicken, then sprinkle salt and pepper on top to season.
5. Cook the chicken for about 6 to 8 minutes on each side until they turn golden brown.
6. Remove the chicken from the skillet onto a clean plate.
7. In the same skillet, add celery, onion, carrots, and thyme. Sauté for about 5 minutes or until soft.
8. Sprinkle a bit of flour on top of the sauteed veggies, then cook for another 2 minutes.
9. Pour in the chicken broth, then stir until well blended. Simmer for about 10 minutes or until the texture of the sauce becomes thick.
10. Remove the skillet from the stove, then add the chicken, peas, and cream. Stir until well combined.
11. Horizontally slice the biscuits into two.
12. Arrange the biscuits around the skillet.
13. Brush each biscuit with egg wash.
14. Place the skillet inside the preheated oven and bake the pie for about 30 minutes or until done.
15. Remove from the oven and allow the pie to rest for a few minutes at room temperature.
16. Serve warm and enjoy!
