Slow-Cooker Beef Stew

Food for the soul! Yes, this beef stew is food for the soul! Every bite will bring relief and happiness to your life. I kid you not! Give it a try and enjoy!

Ingredients:

1-1/2 lb potatoes, peeled and cubed
6 medium carrots cut into 1-inch lengths
1 medium onion, coarsely chopped
3 celery ribs, coarsely chopped
3 tbsp all-purpose flour
1-1/2 p beef stew meat, cut into 1-inch cubes
3 tbsp canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) beef broth
1 tsp ground mustard
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dried thyme
1/2 tsp browning sauce, optional
Minced fresh thyme

Directions:

Step 1: In a 5-quart slow cooker, arrange the potatoes, carrots, celery, and onion on the bottom. \

Step 2: In a large shallow dish, add in the flour.

Step 3: Add in the stew meat and toss until well coated with the flour.

Step 4: Place a large skillet on the stove and turn the heat to medium.

Step 5: Add in oil and allow it to become hot.

Step 6: Add in the coated meat and cook until brown. Make sure to cook them in batches.

Step 7: Place the cooked meat on top of the veggies.

Step 8: In a large mixing bowl, add in the broth, tomatoes, mustard, thyme, mustard, salt, and pepper. Stir until well combined.

Step 9: Pour the mixture over the beef and cover with a lid.

Step 10: Cook the stew for 7 to 8 hours on low heat or until everything is fork-tender.

Step 11: Ladle the stew into serving bowls and sprinkle fresh thyme on top.

Step 12: Serve and enjoy!
