Ingredients:
2 tbsp extra virgin olive oil
3 cloves of garlic, minced
2 yellow onions, quartered and thinly sliced
¼ c Worcestershire sauce
2-3 lbs. beef chuck roast or rump roast, trimmed of excess fat (I’ve also used a sirloin roast and boneless bottom round for a leaner option)
8-12 slices cheese (provolone, Swiss, Havarti or Monterey Jack)
3 c low sodium beef broth
4-6 rolls, nothing too soft or it will fall apart once dipped
1 bay leaf
salt/pepper
Directions:
1. Rub each roast with salt and pepper. Make sure to coat them well.
2. Add the beef and Worcestershire sauce into a large measuring cup. Stir until the beef is well coated.
3. Place a large cast-iron skillet on the stove and turn the heat to medium.
4. Add oil and allow it to become hot.
5. Add the meat and sear each side for a few minutes until they turn brown.
6. Add the onions and sauté until soft.
7. Add the garlic and sauté until aromatic.
8. Add beef broth and scrape the bottom of the skillet and to get the browned bits. Remove from the heat.
Slow Cooker Method:
1. Transfer everything into a slow cooker, then add the rest of the broth and bay leaf.
2. Cover the slow cooker and cook for about 3 hours on a low setting or 6 hours on a high setting.
3. Use two forks to shred the meat into small pieces.
4. Add au jus into the slow cooker and stir until well blended. Add salt and pepper to season.
5. Fill each toasted roll with the meat and onions, then sprinkle a generous amount of cheese.
6. Place them inside the oven and bake for a few minutes at 375 degrees F until the cheese is melted completely.
7. Serve and enjoy!
