Ingredients:
12 – 16 oz smoked sausage
1 c chopped yellow onion
½ tsp salt
¼ tsp cayenne
4 whole cloves garlic, peeled
5 sprigs of fresh thyme
4 bay leaves
3 tsp finely chopped Italian parsley
8 c chicken stock
1 lb dried black-eyed peas, rinsed and drained
1 tbsp minced garlic
Minced green onions, to garnish (optional)
Directions:
Step 1: Slice the sausage into small cuts.
Step 2: Place a large pot on the stove and turn the heat to medium.
Step 3: Add the sausage slices and cook until greasy and brown.
Step 4: Add the garlic clover, onions, bay leaves, cayenne, parsley, thyme, salt, and pepper. Stir and cook for 5 minutes.
Step 5: Add the stock, minced garlic, and black-eyed peas. Stir until just mixed.
Step 6: Allow the mixture to boil, then reduce the heat to low.
Step 7: Cover the pot and simmer for 1 1/2 hours or until done.
Step 8: Ladle into serving bowls, then sprinkle green onions on top.
Step 9: Serve and enjoy!
