by Sheryl November 10, 2020

Prep Time: 15 mins | Cook Time: 30 mins | Yield: 4-5 Servings

Everyone loves potatoes, right? Well, this recipe that I am sharing with you today is the best of the best! Have a break from the usual potato fries or mashed potatoes. It is time to take these bad boys to the next level! Give this one a try. It is perfect to eat pretty much any time of the day. You will surely be satisfied once you get a bite of these heavenly treats! If you think you can make this recipe even better, try adding your preferred ingredients to it. For example, I have always wanted to add cheese in it. I think cheese would be a great addition to this almost-perfect dish. My advice to you is to tweak it a little and give it your take. Enjoy!

Ingredients:

2 large russet potatoes, cut into 1-inch cubes
14 ounces smoked sausage, sliced thin
1 small onion, chopped
1/2 cups chopped bell pepper, green or red
1 clove garlic, minced
1/4 chicken stock
1 1/2 teaspoon paprika
1/4 teaspoon salt and pepper
1/4 teaspoon dried parsley
2 tablespoon vegetable oil

Directions:

Step 1: Place a large skillet on the stove and turn the heat to medium.

Step 2: Add in olive oil and allow it to become hot.

Step 3: Add in the smoked sausage and cook until the colour turns brown.

Step 4: Remove the browned sausage and add in potatoes. Cook until brown and tender.

Step 5: Add the onions, garlic, and pepper. Cook for another 5 minutes or until translucent and aromatic.

Step 6: Pour in the chicken stock and cook for 5 minutes covered. Make sure to stir from time to time.

Step 7: Uncover and add in the spices. Stir until well mixed, then put the smoked sausage back in.

Step 8: Serve and enjoy!
