Smothered Pork Chops

Prep Time: 10 mins | Cook Time: 50 mins | Total Time: 1 hr | Yield: 4 Servings

These heavenly pork chops are just perfect! Serve them over rice and you have yourself a meal to remember. Enjoy!

Ingredients:

Pork Chops:

4 pork chops centre-cut, bone-in
Salt/Pepper, to taste
2 tbsp flour
2 tbsp olive oil
4 slices gruyere or swiss cheese, optional

French Onion Sauce:

6 tbsp Butter, Separated
2 large yellow onions, sliced 1/4 inch thick
1 tbsp flour
8 ounces button mushrooms, sliced
2 cloves garlic minced
1/3 c dry white wine
1 ¼ c chicken broth
1 sprig fresh Thyme, or 1 teaspoon dried thyme

Directions:

For the Pork Chops:

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Season with salt and pepper the pork chops and flour them.

Step 3: Place a large cast-iron skillet on the stove and turn the heat to medium-high.

Step 4: Add 3 tablespoons of olive oil and allow it to become hot.

Step 5: Add the pork chops and sear each side for about 3 to 4 minutes or until brown.

Step 6: Transfer the pork chops onto a baking sheet.

Step 7: Place them inside the preheated oven and bake for about 10 to 15 minutes or until done

For the French Onion Sauce:

Step 1: Add 4 tablespoons of butter in the same skillet over medium-low and allow it to melt.

Step 2: Add the onions and stir until well coated with butter. Cook them for about 35 minutes or until caramelized. Make sure to stir from time to time.

Step 3: Add the rest of the butter and mushrooms. Cook the mushrooms for about 5 minutes or until soft.

Step 4: Add the garlic and cook for a minute or until aromatic.

Step 5: Add 1 tablespoon of flour and toss everything until well coated, then allow it to cool for another minute or two.

Step 6: Turn the heat up to medium-high.

Step 7: Pour white wine and simmer for about 5 minutes.

Step 8: Scrape the bottom of the skillet to get the brown bits.

Step 9: Add the fresh thyme and chicken broth. Stir until just mixed.

Step 10: Turn the heat down to medium-low and simmer for 15 minutes or until the sauce is thick.

Step 11: Put the cooked pork chops back to the skillet and toss until well coated with the sauce.

Step 12: Serve and enjoy!
