Southern-Style Baked Banana Pudding

Baked banana creampie everyone! Yes, you read it right. This is probably one of the best recipes of pudding I have ever tried. It has a lot of flavors so a lot is going on in one bite. I have listed all the steps so there is no reason for you not to give this a try. Enjoy!

Ingredients:

½ cup white sugar
¼ teaspoon salt
⅓ cup all-purpose flour
1 tablespoon all-purpose flour
2 cups of milk
½ teaspoon vanilla extract
1 tablespoon banana liqueur
1 tablespoon cold butter

For the Pudding:

3 medium (7″ to 7-7/8″ long)s very ripe bananas, or more to taste, sliced
1 ½ teaspoon freshly squeezed lemon juice
1 (12 ounces) package miniature vanilla wafers

For the Meringue Topping:

⅛ teaspoon cream of tartar
2 tablespoons white sugar

Directions:

Step 1: Crack the eggs and separate the whites from the yolks. Place the yolks into a saucepan and the whites in the bowl of a stand mixer.

Step 2: Add in 1/3 cup plus, sugar, 1 tablespoon of flour, and salt into the yolks. Pour in 1/4 cup of the milk and whisk until well blended. Pour in the rest of the milk and continue to whisk until the texture becomes smooth.

Step 3: Place the saucepan on the stove and turn the heat to medium. Whisk and cook until thick.

Step 4: Remove from the heat and add in the banana liqueur, vanilla extract, and cold butter. Whisk until the butter is completely melted then set aside.

Step 5: Prepare the oven and preheat to 200 degrees C.

Step 6: Mix lemon juice with banana slices.

Step 7: Spread a quarter of the custard on the bottom of the baking dish. Arrange 1 layer of vanilla wafers. Cover the wafers with 1/2 of the custard and 1/2 of the bananas. Repeat this method until all the ingredients are arranged in layers.

Step 8: Add in cream of tartar into the egg whites. Beat until foamy and add in sugar. Continue beating until stiff peaks form. Spread the meringue using a spatula on top of the pudding.

Step 9: Place inside the preheated oven and bake for 7 to 10 minutes or until the meringue turns color brown.

Step 10: Serve and enjoy!

Notes:

1. This is best served warm or chilled.

2. Bake this in a clear glass dish so you can see it once inside the oven.
