These juicy chicken thighs are superb! Oh, man, you have got to give this recipe a try, I’m telling you! Enjoy!
Ingredients:
FOR THE SPICE RUB
2 tsp, or to taste, chilli powder
1 tsp or to taste, paprika
1 tsp ground cumin
2 tsp garlic powder
1/2 tsp salt
1/8 tsp ground black pepper
FOR THE HONEY SAUCE
1/3 c honey
1 tbsp apple cider vinegar
FOR THE CHICKEN
1 tbsp unrefined, cold-pressed coconut oil
6 to 8 boneless, skinless chicken thighs
green onions, for garnish
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Place a cast-iron skillet on the stove and turn the heat to medium.
Step 3: Add the coconut oil and allow it to melt.
Step 4: Add all the ingredients for the rub. Stir until well mixed.
Step 5: Coat the chicken thighs with the spice rub.
Step 6: Put the chicken thighs into the hot oil and cook each side for about 5 minutes or until they turn brown.
Step 7: Meanwhile, add the apple cider vinegar and honey into a mixing bowl. Stir until well mixed.
Step 8: Pour the honey mixture into the pan.
Step 9: Remove the pan from the heat and transfer it inside the preheated oven. Bake the chicken thighs for about 30 minutes or until done.
Step 10: Remove the pan from the oven and allow the chicken to cool for a few minutes.
Step 11: Serve and enjoy!
