Ingredients:
about 60g (½ c) flour of choice, I used some chickpea flour
2 bell peppers, I used one red and one yellow, chopped
200g (1 c) red lentils
½ teaspoon chili flakes
1 medium onion, diced
1 teaspoon spicy paprika
4 tablespoons psyllium husks, or one large egg
2 teaspoons smoked paprika
4 tablespoons nutritional yeast flakes
oil, for frying
1 small bunch of parsley, chopped
sea salt and ground pepper, to taste
Directions:
1. Place a pot with water on the stove. Add the lentils and submerge them in the water.
2. Turn the heat to medium and allow the water to boil. Cook the lentils for about 15 minutes or until done. Remove the pot from the heat.
3. Strain the lentils, then move them into a large bowl. Mash the lentils with a fork.
4. Add the remaining ingredients into the bowl with the mashed lentils aside from the oil. Stir everything until well blended. If the texture gets too wet, add a bit of flour and stir until it turns into your desired texture. You can chill it in the fridge for about 10 minutes.
5. Place a non-stick pan on the stove and turn the heat to medium.
6. Add a bit of sesame oil and allow it to become hot.
7. Spoon the lentil mixture into patties, then drop each into the hot pan. Cook each side for 2 minutes or until done.
8. Transfer the Spicy Vegan Lentil Cakes onto a clean plate lined with paper towels to drain any excess oil.
9. Serve immediately and enjoy!
Notes:
The lentil batter can last up to 3 to 4 days in the fridge.
