Ingredients
4 boneless, skinless chicken breast halves (4 oz. each)
1-1/2 tsp olive oil
1-3/4 c. sliced fresh mushrooms
3 c. fresh baby spinach
2 tbsp chopped pecans
3 green onions, sliced
2 slices reduced-fat provolone cheese, halved
1/2 tsp rotisserie chicken seasoning
How to make Spinach and Mushroom Smothered Chicken
Step 1: Prepare and preheat the grill or broiler.
Step 2: Heat the oil in a large skillet over medium-high heat. Once the oil is hot, add the mushrooms and green onions. Saute until tender. Fold in the spinach and pecans and cook until the spinach has wilted. Take off the heat and keep warm.
Step 3: Sprinkle the seasoning all over the chicken. Place the chicken on an oiled grill rack and grill over medium heat for about 4 to 5 minutes on each side. Or place 4 inches from the heat on a greased broiler pan and broil until the internal temperature of the chicken reaches 165 degrees and the cheese has melted.
Step 4: Serve the chicken with the mushroom mixture on top. Enjoy!
