8 ounces button mushrooms
1 clove garlic, minced
1-10 ounces box frozen spinach, thawed
4 large Eggs
1 c milk
2 ounces feta cheese
1/4 c Parmesan, grated
1/2 c shredded mozzarella
Salt and pepper to taste
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Squeeze the thawed spinach to remove the excess moisture.
Step 3: Mince the garlic and clean the mushrooms and slice them into thin cuts.
Step 4: Place a non-stick skillet on the stove and turn the heat to medium.
Step 5: Add the garlic, mushrooms, and season them with salt and pepper to taste. Saute for about 5 minutes or until aromatic and translucent.
Step 6: Apply cooking spray in a 9-inch pie dish.
Step 7: Arrange the dried spinach on the bottom of the prepared pie dish.
Step 8: Spread the cooked mushrooms over the spinach, then top everything with crumbled feta cheese.
Step 9: Add the eggs, milk, and Parmesan cheese in a medium mixing bowl. Whisk until well mixed.
Step 10: Spread the mixture on top of the feta cheese, then sprinkle mozzarella over.
Step 11: Put the dish onto a baking sheet.
Step 12: Place it inside the preheated oven and bake for 45 to 55 minutes or until the cheese turns golden brown.
Step 13: Remove from the oven and allow it to cool at room temperature.
Step 14: Serve and enjoy!
