Ingredients:
1 tablespoon light soy sauce
1/4 teaspoon sugar
4 chicken drumsticks, remove the bones and cut into small pieces
2 spring onions
1/4 teaspoon white pepper powder
1 tablespoon Chinese cooking wine
5 slices of ginger
1/2 tablespoon oyster sauce, optional
Other Ingredients:
2 tablespoons vegetable cooking oil, heat until smoky
4 garlic cloves, finely chopped
1 tablespoon fermented black beans
wood ear mushrooms as needed
other mushrooms
1 tablespoon cornstarch
Directions:
1. Slice the chicken into small cuts.
2. Add the chicken slices into a large mixing bowl along with sugar, white pepper, light soy sauce, Chinese cooking oil, spring onion, oyster sauce, and ginger. Stir until well combined, then marinate the chicken for at least 30 minutes.
3. Remove the ginger and onions. Add cornstarch and stir until well combined.
4. Add the mushrooms into a pot, then top with the marinated chicken.
5. Spread the chopped garlic and fermented black beans on top.
6. Place a pan on the stove and turn the heat to medium.
7. Add 2 tbsp of oil and allow it to become hot.
8. Pour the hot oil on top of the chicken. Stir everything until well mixed.
9. Steam for about 15 minutes over high heat.
10. Transfer everything into a large serving bowl, then drizzle sesame oil and light soy sauce on top.
11. Serve with rice and enjoy!
