Ingredients:
1 1/2 c all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 c plain Greek yoghurt
1 c sugar
3 large eggs
1 1/2 tsp almond extract
1/2 c vegetable oil
1 c diced strawberries about 1 1/4 cup whole
Glaze:
1/2 c smashed strawberries about 1 cup whole
2 c powdered sugar
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray in a 9-inch loaf pan.
3. In a mixing bowl, add flour, baking powder, and salt. Whisk until well mixed.
4. In another mixing bowl, add sugar, Greek yoghurt, oil, almond extract, and eggs. Whisk until well combined.
5. Transfer the egg mixture into the flour mixture and stir until well mixed.
6. Add the strawberries and stir until well mixed.
7. Transfer the batter into the greased loaf pan and spread it evenly.
8. Place it inside the preheated oven and bake for 50 minutes or until a toothpick comes out clean after inserting it in the middle.
9. Remove from the oven and allow it to cool at room temperature for about 10 minutes.
To Make the Glaze:
1. Add the mashed strawberries and powdered sugar into a medium mixing bowl. Stir until well mixed.
2. Spread the glaze over the cooled cake.
3. Slice the cake into even cuts.
4. Serve and enjoy!
