This casserole takes minimal prep work, but guarantees the best dinner excellent for your entire family! If you want to spice up this casserole, you can add cayenne pepper, ghost pepper, or jalapenos pepper.
INGREDIENTS
3 cloves garlic, minced
1 c. onions, chopped
1 ½ pounds of ground beef
2 green bell peppers, diced
1 teaspoon Cajun seasoning
¼ teaspoon red pepper flakes
½ teaspoon pepper
3 teaspoon Worcestershire sauce
2 c. beef broth
1 ½ c. rice
14.5 ounces can of diced tomatoes
1 c. Pepper Jack cheese, shredded
2 c. sharp cheddar cheese, shredded
How to make Stuffed Bell Pepper Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees. Using a spray, grease a 3-qt baking pan.
Step 2: Place the ground beef, onions, bell peppers, garlic, seasoning, pepper, and red pepper flakes in a large frying pan. Cook until the meat is brown and the peppers have softened. Drain the excess grease when done and transfer the meat mixture into the prepared baking dish.
Step 3: Into the meat mixture, add the Worcestershire sauce along with the diced tomatoes, rice, and beef broth. Mix well until combined.
Step 4: Tent the baking dish and place it in the preheated oven to bake for about 1 hour or until the rice is tender.
Step 5: Take the baking dish out of the oven and sprinkle the shredded cheese on top. Return to the oven and resume baking for another 5 to 10 minutes, uncovered, or until the cheese is bubbly and melted.
