Ingredients:
1 1/2 cups marinara, divided
2 medium eggplants, halved
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
1 teaspoon dried oregano
Kosher salt
Freshly ground black pepper
2 cloves garlic, minced
1 cup chopped tomatoes
1 large Egg, lightly beaten
2 1/2 cup shredded mozzarella, divided
1/4 cup freshly grated Parmesan
1/4 cup Italian bread crumbs
Freshly sliced basil, for garnish
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Add 1 cup of marinara sauce in a 9×13-inch baking dish and spread it evenly on the bottom.
3. Slice the eggplants lengthwise, then use a spoon to remove most of the insides to create boats.
4. Arrange them into the prepared baking dish.
5. Place a large skillet on the stove and turn the heat to medium.
6. Add olive oil and allow it to become hot.
7. Add the onion and sauté for about 5 minutes or until translucent.
8. Add the chopped eggplants, oregano, salt, and pepper. Stir and cook for about 4 minutes or until done.
9. Add the garlic and sauté until aromatic.
10. Remove from the heat and transfer the mixture into a mixing bowl.
11. Add egg, 1 cup of mozzarella cheese, marinara sauce, and tomatoes. Stir until well combined.
12. Fill each eggplant boat with the mixture.
13. Sprinkle the rest of Parmesan cheese, mozzarella cheese, and breadcrumbs over the stuffed eggplants.
14. Place them inside the preheated oven and bake for 50 minutes or until the cheese turns golden brown.
