Ingredients:
2 tbsp extra virgin olive oil
1/2 c chopped sun-dried tomatoes
1 2 lbs. flank steak, butterflied
2 c grated mozzarella cheese
1 10 oz. the package is frozen, chopped spinach, thawed and well-drained
1 tsp salt, separated
1 tsp black pepper, separated
Directions:
1. Prepare the grill and preheat to high.
2. Add the butterflied steak onto a flat surface.
3. Sprinkle salt and pepper over the steak and rub until well coated.
4. Add the sun-dried tomatoes and spinach over the steak. Make sure to leave about a 2-inch border over the side of the steak.
5. Roll the steak from the bottom going upwards. Use kitchen twine to tie the steak. Make sure to leave a 1-inch space between each tie.
6. Brush olive oil all over the steak, then coat it with salt and pepper all over.
7. Put it over the grill and cook each side for 30 minutes or until cooked to your preference.
8. Remove from the grill and allow it to rest for at least 10 minutes.
9. Serve and enjoy!
