Ingredients:
1 Egg room temperature
1 1/2 cups tapioca flour
2/3 cup milk we used raw, feel free to use what you have
1/2 cup grated cheese parmesan or other
1 teaspoon salt or more – to taste
1/3 cup olive oil
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Brush with butter in a mini muffin pan.
3. Add the egg, milk, salt, oil, and cheese into a blender. Pulse until well blended.
4. Add the tapioca flour gradually and beat every addition until well blended.
5. Transfer the batter into the prepared muffin pan and spread it evenly.
6. Place it inside the preheated oven and bake for about 15 minutes or until the top turns golden brown.
7. Remove from the oven and allow it to rest for a few minutes at room temperature.
8. Serve warm and enjoy!
Notes:
Feel free to make the batter a day or week before cooking. Just place it inside the fridge.
