Ingredients:
2 tablespoons Butter
1/2 c Parmesan cheese grated
400 g Potatoes Peeled and sliced lengthways thinly
400 g Pumpkin Thinly sliced
1 Can Crushed Tomatoes
1 Grated Zucchini
1 Carrot, Grated
1 teaspoon Salt and Pepper to Taste
1 teaspoon Mixed Herbs
Directions:
1. Prepare the oven and preheat to 180 degrees C or 356 degrees F.
2. Apply cooking spray in a 1.5 litres baking tray.
3. Add butter into a heat-proof bowl, then place it inside the microwave. Heat for a few minutes until the butter is melted completely. Remove from the microwave.
4. Add the herbs into the melted butter, then stir until well blended.
5. Add all the veggies into a large mixing bowl, then pour the melted butter on top and toss until well coated.
6. Arrange the veggies into the prepared baking tray.
7. Spread the canned tomatoes over the veggies, then sprinkle the seasonings to taste.
8. Cover the baking tray with aluminium foil.
9. Place it inside the preheated oven and bake the veggies for about 45 minutes.
10. Remove the foil cover, then sprinkle a generous amount of cheese on top.
11. Bake for another 15 minutes or until the cheese has melted completely and turns golden brown.
12. Remove from the oven and let it rest for a few minutes at room temperature.
13. Serve warm and enjoy!
