Ingredients:
1 large sweet potato, peeled and diced (cook in the microwave for about 8-10 minutes before cutting, to soften) *
1 (15 ounces) can of black beans, drained and rinsed
1 (14.5 ounces) can diced tomatoes, drained
½ onion, chopped
1 red or green bell pepper, chopped
1 tsp chilli powder
1 tsp garlic salt
½ tsp ground cinnamon
1 c salsa, divided
2-4 tortillas, depending on size (corn, flour, sprouted, gluten-free or whole wheat)
4 ounces shredded cheese, use dairy-free as desired (optional)
Salt & pepper to taste
Optional garnish: fresh cilantro, avocado sliced, guacamole, and/or sour cream
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray in an 8×8-inch baking dish.
Step 3: Add the black beans, sliced sweet potato, onion, tomatoes, cinnamon, bell pepper, chilli powder, and garlic salt into a large mixing bowl. Stir until well mixed.
Step 4: Add about half a cup of the salsa into the prepared baking dish and spread it evenly on the bottom.
Step 5: Break up a tortilla and spread it over the salsa.
Step 6: Spread the potato mixture on top of the tortillas.
Step 7: Add the rest of the salsa over the potato mixture and spread it evenly.
Step 8: Add another layer of tortillas as well as the rest of the potato mixture. Sprinkle a generous amount of cheese on top.
Step 9: Place it inside the preheated oven and bake for 25 minutes or until done.
Step 10: Remove from the oven and allow it to cool at room temperature.
Step 11: Serve and enjoy!
