This casserole will surely turn your bad day into an awesome one! This is my ultimate comfort food. Give it a try and prepare to be amazed. Enjoy!
For the sweet potato filling:
3 c peeled cooked sweet potatoes, from about 3 lbs (about 1.36kg) sweet potatoes
1/2 c (99g) granulated sugar
1/2 c (113g) butter, melted and cooled
1/2 c (113g) milk
2 large Eggs
1 tsp vanilla
½ tsp salt
For the streusel topping:
1 c (213g) light brown sugar, packed
1/2 c (71g) all-purpose flour
1 c (113g) chopped pecans
1/2 c (113g) unsalted butter, melted
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Add in the prepared potatoes, melted butter, eggs, milk, vanilla, salt, and sugar in a food processor. Pulse for a minute until it turns into a smooth puree. (You can also use an electric mixer to combine all the ingredients.)
Step 3: Apply cooking spray in a 12×8-inch casserole dish.
Step 4: Transfer the mixture into the prepared casserole dish and spread it evenly on the bottom.
Step 5: In a mixing bowl, add in the flour, pecans, and brown sugar. Stir until well combined.
Step 6: Add in the melted butter and stir until well mixed or moist. Make sure not to over mix to prevent it from becoming pasty.
Step 7: Spread the mixture on top of the sweet potato mixture.
Step 8: Place it inside the preheated oven and bake for 30 minutes or until the top turns golden brown.
Step 9: Remove from the oven and allow it to cool for at least 5 minutes.
Step 10: Serve warm and enjoy!
How to Cook the Sweet Potatoes:
1. Prepare the oven and preheat to 200 degrees C.
2. Wash and poke small holes on the potatoes using a fork, then bake them inside the preheated oven for 60 to 75 minutes.
3. Remove from the oven and peel them, then allow them to cool at room temperature.
4. In a mixing bowl, add in the cooked potatoes and eggs. Stir until well combined.
5. You can also prick the potatoes and heat them inside the microwave for 10 minutes or so.
