SWEET POTATO EVERYTHING BAGEL CHIPS (HEALTHY, PALEO)

Prep Time: 15 mins | Cook Time: 20 mins | Total Time: 35 mins | Yield: 2 to 3 Servings

These delicious potatoes are the best snack ever! Give this recipe a try now!

Ingredients:

Sweet potato bagel chips:

1 pound sweet potato
4 tablespoons avocado oil
3 tablespoons everything bagel seasoning

Dairy-free cheese dip (optional):

1/4 c coconut cream
1 tablespoon avocado oil
1 teaspoon apple cider vinegar
1/4 teaspoon sea salt

AIP everything bagel seasoning blend (AIP option):

2 tablespoons dried onion flakes
2 tablespoons dried garlic granules
2 teaspoons dried chives
1 teaspoon of sea salt

Directions:

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Line with parchment paper two baking sheets.

Step 3: Wash and scrub the skins of the sweet potatoes.

Step 4: Slice the potatoes into 1/8-inches with a mandoline slicer.

Step 5: Arrange the sliced potatoes on the prepared baking sheets. Make sure to leave a small space between each slice.

Step 6: Drizzle 2 tablespoons of avocado oil and make sure to coat all sides with it.

Step 7: Top the slices with 1 1/2 tablespoons of everything bagel seasoning.

Step 8: Place the baking sheets inside the preheated oven and bake for 10 minutes.

Step 9: Remove from the oven and turn each potato slice and top with the rest of the everything bagel seasoning.

Step 10: Put the baking sheets back in the oven and bake for 10 more minutes or until crispy.

Step 11: Remove from the oven.

Step 12: Transfer the potatoes on a clean serving plate.

Step 13: Serve with the cream cheese dip. Enjoy!

To Make the Cream Cheese Dip:

Step 1: In a small mixing bowl, add all the ingredients. Stir until well combined.

Step 2: Add more seasoning if needed.

Step 3: Serve with the sweet potatoes.
