Sweet Potato Scones with Honey Glaze

Prep Time: 15 mins | Cook Time: 15 mins | Total Time: 30 mins | Yield: 8 Servings

These heavenly treats are so good! Oh, man, give it a try and you are so in for a treat! Have a great day, friends!

Ingredients:

2 and 1/4 c all-purpose flour
1/4 c packed brown sugar
2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon salt
1/3 c butter (or 76 grams) cold, cut into small pieces
1 large egg lightly beaten
1 c mashed sweet potato from 1 medium sweet potato or a 300 grams piece
1/3 c buttermilk
For the Honey Glaze:
1 and 1/2 c powdered sugar
1/8 c honey
1/8 c milk
pinch of salt

Directions:

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Line with parchment paper a baking sheet.

Step 3: Add the flour, baking powder, brown sugar, cinnamon, baking soda, and salt in a large mixing bowl. Whisk until well mixed.

Step 4: Add the cut butter into the bowl to make a coarse meal.

Step 5: In a separate mixing bowl, add the buttermilk, egg, and mashed potato. Stir until well combined.

Step 6: Transfer the wet mixture into the dry ingredients, then stir until well mixed and moist.

Step 7: Knead the dough on a flat surface sprinkled with flour.

Step 8: Form the dough into an 8-inch circle.

Step 9: Slice the dough into 8 wedges.

Step 10: Arrange the wedges into the prepared baking sheet. Make sure to leave about 1-inch space between each wedge.

Step 11: Place the baking sheet inside the preheated oven and bake for about 15 to 20 minutes or until golden.

Step 12: Remove from the oven and let the scones sit at room temperature.

To Make the Honey Glaze:

Step 1: In a medium mixing bowl, add the milk, honey, powdered sugar, and milk. Stir until well mixed.

Step 2: Drizzle the glaze over the potato scones.

Step 3: Serve and enjoy!
