This Taco Lasagna is what you just might need today! Oh, man, you are so in for a treat! I am so excited to share this with you today because it is simply the best! Feel free to tweak it a bit to your liking. Enjoy!
Ingredients:
1 can (15 ounces) black or pinto beans (rinsed and drained)
12 flour or corn tortillas (8-inch ones)
3 c shredded Mexican cheese blend
2 cans (16 ounces) refried beans (refried beans)
Beef Layer:
6 cloves garlic (minced)
1 1/2 lbs. ground beef
1 small onion (finely diced)
1 green bell pepper (finely diced)
1 can (7 ounces) diced green chiles
3 c salsa
Salt and pepper to taste
2 tbsp taco seasoning
Cornstarch Slurry:
4 tbsp water
2 tbsp cornstarch
Topping:
1 c shredded Mexican cheese blend
1 c salsa
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Put a baking rack in the centre of the preheating oven.
3. Apply cooking spray in a 9×13-inch deep casserole dish.
For the Beef Layer:
1. Put a large skillet on the stove and turn the heat to medium-high.
2. Add 2 tbsp of oil and allow it to become hot.
3. Add the ground beef, then cook until crumbly and brown. Leave 2 tbsp of the accumulated grease, then discard the rest.
4. Add the bell pepper, minced garlic, onions, taco seasoning, 3 cups of salsa, and green chilis. Sauté until soft and aromatic. Sprinkle salt and pepper to taste.
5. Simmer everything for 2 minutes, then turn the heat down to low and cook for about 5 more minutes.
6. Add the slurry, then stir and cook for a few minutes until the texture of the sauce becomes thick. Remove the skillet from the stove.
To Assemble:
1. Arrange 2 tortillas into the bottom of the prepared pan.
2. Divide two tortillas into 4 pieces, then place them on the sides and corners of the prepared pan.
3. Spread 1/2 of the refried beans over the tortillas.
4. Scatter about 1/2 of the pinto beans over the beef mixture layer.
5. Sprinkle about 1 1/2 cups of shredded Mexican blend cheese over the beans. Repeat the process until everything is arranged in layers ending with cheese.
6. Top the cheese with tortillas and 1 cup of salsa.
7. Sprinkle more cheese over the salsa.
To Bake:
1. Place it inside the preheated oven and bake for about 30 minutes or until done.
2. Broil for another 3 minutes or until the cheese turns golden brown.
3. Remove from the oven and allow it to cool for about 30 minutes at room temperature.
4. Serve and enjoy!
