One of the easiest and most crowd-pleasing ways to feed a large group is to make a batch of Tater Tot Breakfast Casserole!
INGREDIENTS
1 lb bacon
1 (32-oz.) package of tater tots
2 (9-oz.) packages of breakfast sausage links
1/2 c. milk
12 large eggs
1/4 c. green onions, thinly sliced
2 c. cheddar cheese, shredded – divided
1 c. Monterey jack cheese, shredded
2 tbsp green onions, thinly sliced
1/2 tsp salt
1/4 tsp black pepper
HOW TO MAKE TATER TOT BREAKFAST CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees. Using nonstick cooking spray, grease a 9 x 13-inch baking dish and set aside.
Step 2: In a skillet, cook the sausage until completely cooked. Transfer the sausage to a paper towel-lined plate, then drain all the grease from the skillet. Into half-inch pieces, slice the sausage.
Step 3: In the same skillet, cook the bacon until brown and crispy. Then, drain on a paper towel-lined plate before crumbling.
Step 4: In the prepared baking dish, arrange the tater tots in a single layer.
Step 5: Mix the eggs, milk, 1/4 cup of green onions, salt, and pepper. Add the cooked sausage and half of the bacon. Stir well. Then, fold in a cup each of Monterey jack cheese and cheddar cheese. Over the tater tots, pour the egg mixture.
Step 6: Place in the preheated oven and bake for about 40 to 45 minutes or until the egg mixture is set.
Step 7: On top, evenly sprinkle the rest of the 1 c cheddar cheese. Return the casserole to the oven and resume baking for another 5 to 7 minutes or until the cheese has melted.
Step 8: Remove from the oven when done and let the casserole stand for about 10 minutes before slicing.
Step 9: Serve with sprinkles of the remaining crumbled bacon and green onions. Enjoy!
NOTES:
Into the baking dish, you can throw in the tater tots straight from the freezer.
Make sure to avoid overbaking the casserole.
Let the casserole rest before slicing and serving.
