Ingredients:
BASIC BRINE
3 cups of water
2 cups of ice cubes
1/4 cup of kosher salt
1/4 cup of sugar
PORK CHOPS
6 pork chops – with bone
1 Egg, beaten with a little water to make an egg wash
Italian bread crumbs
vegetable or canola oil
1/2 large onion, sliced thin
2 clove garlic, minced
1 1/2 cups chicken broth
1/2 cup dry white wine
1/2 teaspoon dried parsley flakes
1/4 teaspoon dried basil
1/4 teaspoon freshly ground black pepper (or to taste)
Directions:
Step 1: In a plastic bowl with a lid, add all the ingredients for the brine. Stir until well mixed.
Step 2: Add in the pork chops and cover the bowl. Place it inside the fridge to chill for 4 hours. (Brining tenderizes the pork chops)
Step 3: Remove the bowl from the fridge and remove the pork chops.
Step 4: Use paper towels to pat dry the pork chops.
Step 5: Dip each pork chop into the egg wash and generously coat each with the Italian bread crumbs.
Step 6: Place a large skillet on the stove and turn the heat to medium.
Step 7: Add enough oil and allow it to become hot.
Step 8: Add the pork chops and fry each side for 3 minutes or until golden brown. Place the fried pork chops on a clean plate lined with paper towels.
Step 9: Remove the oil from the skillet and leave one tablespoon.
Step 10: Add the onions and sauté for 5 minutes or until soft.
Step 11: Add in the minced garlic and sauté for 1 minute or until aromatic.
Step 12: Add the white wine, chicken broth, and seasonings. Stir until just mixed.
Step 13: Reduce the heat to low and simmer for 5 minutes.
Step 14: Add the fried pork chops back and arrange them on the bottom of the skillet.
Step 15: Cover the skillet with a lid and cook for 20 minutes or until done.
Step 16: Serve and enjoy!
Note:
These delicious pork chops are best served over noodles or rice!
