Ingredients:
1 Pork Tenderloin (1.5 – 3 lbs)
3 cloves garlic (minced)
¼ c olive oil
2 tbsp herbes de provence
Kosher salt and freshly ground black pepper
2 tbsp extra virgin olive oil
3 tbsp unsalted butter (divided)r
2 medium shallots (finely diced)
2 cloves fresh garlic (minced)
12 oz mushrooms (thinly sliced)
1 tbsp all-purpose flour
½ c Marsala wine
1 c chicken broth
3 tbsp heavy cream
¼ c chopped fresh flat-leaf parsley
Directions:
1. In a resealable bag, add the 3 cloves of garlic, herbes de provence, olive oil, and the pork tenderloin. Shake the bag until the meat is well coated.
2. Allow it to marinate for at least an hour or overnight.
3. Slice the tenderloin into small cuts.
4. Sprinkle salt and pepper on each side.
5. Place a saucepan on the stove and turn the heat to medium.
6. Add olive oil and 1 tbsp of butter, then allow them to become hot and melt.
7. Add the sliced tenderloins and sear each side for about 3 minutes or until brown.
8. Remove from the pan onto a clean plate. Cover them with foil.
9. In the same pan, add the rest of the butter and allow it to melt.
10. Add the shallots and sauté until just brown.
11. Add the garlic and sauté until aromatic. Make sure to scrape the bottom to get the brown bits.
12. Add the mushrooms and sauté until soft.
13. Add flour and stir until well mixed.
14. Add the Marsala wine and stir until just blended.
15. Let the alcohol evaporate, then add the chicken broth. Stir and cook for another 3 minutes.
16. Turn the heat down to low, then add the heavy cream and parsley. Stir until well mixed.
17. Put the tenderloins back in the pan and cook each side for another 2 minutes.
18. Season with salt and pepper if necessary.
19. Serve hot over mashed potatoes, rice, or pasta. Enjoy!
