Excite your taste buds with these fabulous Tex-Mex Beef Enchiladas. Super easy to throw together and perfect to serve with salsa, charro, or refried beans. Pr pair this with Spanish rice and enjoy an authentic Tex-Mex platter with your family and friends any time with these cheesy, mouthwatering enchiladas!
Ingredients
2-3 pounds coarse ground chuck
2 tablespoons cooking oil
1 medium white onion
2-3 medium jalapeno or Serrano peppers
1/3 bunch fresh cilantro
1 tablespoon chilli powder
1 tablespoon smoked paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
12+ homemade corn or flour tortillas (or use store-bought)
1 cup grated Monterey jack cheese
1 c grated Mexican blend cheese
2-3 cups enchilada sauce RED HOT ENCHILADA SAUCE (SALLYE)
How to make Tex-Mex Beef Enchiladas
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Into quarters, slice the peeled onions and place them in a food processor along with the peppers (cut in half, no seeds, stems, and veins), and cilantro leaves. Process until finely minced. Set aside in the food processor until ready to use.
Step 3: In a bowl, combine the cheeses and set them aside.
Step 4: On medium-high, heat a large heavy non-stick skillet, then add the cooking oil along with ground chuck, chilli powder, paprika, salt, and pepper. Cook until the meat is no longer pink, stirring frequently. Add in the onions, peppers, and cilantro mixture and continue to cook for another 2 minutes. When done, take away from the heat and set aside.
Step 5: Ready a 9 x 13-inch baking dish. Lightly grease and set aside.
Step 6: On a paper towel, place about 4 to 6 tortillas at a time, tent with another paper towel, and soften in the microwave. Transfer the softened tortillas on a cutting board or large piece of waxed paper.
Step 7: Spoon the meat mixture down the centre of 1 tortilla and sprinkle with a little amount of grated cheese. Roll the tortilla up and place it in the prepared baking dish seam-side down. Repeat until you have used up all the meat mixture and tortillas.
Step 8: On the entire dish, pour the enchilada sauce and sprinkle with the rest of the cheese. If desired, add extra cheese. Then, bake in the preheated oven for about 25 to 30 minutes until the cheese is bubbly and crusty.
Step 9: Remove the enchiladas from the oven when done and serve with salsa, charro, or refried beans. For an authentic Tex-Mex platter, enjoy with Spanish rice.
