Ingredients:
2-3 pounds coarse ground chuck
2 tablespoons cooking oil
1 medium white onion
2-3 medium jalapeno or Serrano peppers
1/3 bunch fresh cilantro
1 tablespoon chilli powder
1 tablespoon smoked paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
12+ homemade corn or flour tortillas
1 cup grated Monterey jack cheese
1 cup grated Mexican blend cheese
2-3 cups **enchilada sauce
Directions:
1. Prepare and cook the enchilada sauce. Remove from the heat and allow it to cool. By the way, feel free to use store-bought enchilada sauce for this recipe.
2. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
3. Slice the peeled onions into 4, then put them into a food processor.
4. Slice the peppers into two, then discard the seeds, stems, and veins. Add them into the food processor with the onions.
5. Add the cilantro leaves as well, then pulse everything until they are minced.
6. In a mixing bowl, add the cheeses. Stir until well combined.
7. Place a large skillet on the stove and turn the heat to medium-high.
8. Add cooking oil and allow it to become hot.
9. Add the ground chuck, chilli powder, paprika, salt, and pepper. Stir and cook until done.
10. Add the minced ingredients and cook for about 2 minutes or until aromatic. Remove the skillet from the heat.
11. Apply cooking spray in a 9×13-inch baking dish.
12. Cover 6 tortillas with a paper towel, then place them inside the microwave and heat for about 20 seconds. Repeat the process to the rest of the tortillas.
13. Place the heated tortillas onto a flat surface.
14. Fill a tortilla with the meat mixture and top it with grated cheese. Roll and place it into the prepared baking dish. Repeat the process with the rest of the ingredients.
15. Pour the enchilada sauce over and spread it evenly.
16. Sprinkle more grated cheese on top.
17. Put it inside the preheated oven and bake for about 30 minutes or until the cheese turn brown.
