These heavenly treats are my ultimate comfort food! Oh, man, you have got to give these Tex-Mex Meatballs a try! My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Ingredients:
1 tablespoon extra-virgin olive oil
1 1/2 pounds ground beef
1/2 cup panko bread crumbs
1 large Egg
2 cups shredded Mexican cheese blend, divided
1 (15 ounces) can of crushed tomatoes
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 large onion, chopped
1 jalapeño, finely chopped
2 tablespoons chopped chipotle chiles in adobo sauce
Kosher salt
Freshly ground black pepper
2 tablespoons freshly chopped parsley, plus more for garnish
Directions:
1. Add 1 cup of cheese, ground beef, parsley, garlic, bread crumbs, egg, cumin, jalapeno, salt, and pepper into a mixing bowl. Stir until well mixed.
2. Form the meat mixture into small meatballs.
3. Place a large skillet on the stove and turn the heat to medium-high.
4. Add oil and allow it to become hot.
5. Add the meatballs into the hot skillet and sear each side for about 2 minutes or until they turn brown. Remove from the skillet onto a clean plate.
6. In the same skillet, add onion and sauté until translucent.
7. Add the tomatoes and chipotle, then stir until well mixed. Allow the mixture to boil.
8. Turn the heat down to medium-low, then put the meatballs back to the skillet. Stir until well coated by the sauce.
9. Cover the skillet and simmer everything for 10 minutes or until the meatballs are done.
10. Sprinkle a generous amount of cheese on top, then cover the skillet again. Cook for another 2 minutes or until the cheese is melted completely.
11. Sprinkle freshly chopped parsley on top.
12. Serve and enjoy!
