Ingredients:
2 packages of kielbasa sausage sliced into ½-inch pieces
2 (14.5 ounces) cans peeled and diced tomatoes, drained
2 garlic cloves, minced
2 pounds ground beef
1 onion, chopped
4 medium baking potatoes, peeled and diced
1 (15.2 ounces) can whole kernel corn, Drained
2 (14.5 ounces) can diced tomatoes with green chile pepper, with liquid
1 (10 ounces) package frozen mixed vegetables
2 (15 ounces) cans of pinto beans, with liquid
2 teaspoons ground cumin
4 c of water
Salt and pepper to taste
2 teaspoons chilli powder
Directions:
1. Place a Dutch oven on the stove and turn the heat to medium.
2. Add a bit of oil and allow it to become hot.
3. Add the onion and sauté until translucent.
4. Add the ground beef, then cook until crumbly and brown.
5. Add the sausage slices, then cook until brown as well.
6. Add the pinto beans, potatoes, corn, tomatoes, veggies, and tomato slices. Stir and cook for a few minutes.
7. Add all the spices and stir until well blended.
8. Pour in water, then stir again until well mixed.
9. Allow the stew to boil.
10. Reduce the heat down to low, then simmer for about an hour. Add more seasonings if needed.
11. Serve and enjoy!
Note:
Garnish with your preferred herbs.
