Ingredients:
1 tsp coconut oil or light flavoured olive oil
1 pound skirt steak cut against the grain into very thin strips
1 pound green beans trimmed
3-inch piece of ginger about 1/4 cup peeled and cut into very thin matchsticks
4 cloves garlic minced
2 tbsp water
2 tbsp fish sauce or soy sauce
1/2 c fresh basil leaves roughly chopped, plus more for topping
cooked rice for serving
Directions:
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add oil and allow it to become hot.
Step 3: Add the steak and cook for 4 minutes or until brown.
Step 4: Transfer the browned meat onto a clean plate.
Step 5: In the same skillet, add the ginger, garlic, green beans, and water. Stir until well mixed, then cover the skillet. Cook for 5 minutes or until the green beans are tender.
Step 6: Put the beef back to the skillet. Add basil and fish sauce, then toss until well mixed.
Step 7: Serve hot over rice and enjoy!
