Ingredients:
Dough:
1 c milk, lukewarm (240ml)
¼ c granulated white sugar (50g)
1 tablespoon active dry yeast (9g)
2 large eggs, room temperature
¼ c unsalted butter, melted (56g)
1 teaspoon salt
3 ½ to 4 c all-purpose flour, spooned and levelled (420-480g)
Filling:
½ c light brown sugar, packed (100g)
2 tablespoons unsweetened cocoa powder
2 teaspoons cinnamon
6 tablespoons unsalted butter, softened (85g)
1 c semi-sweet chocolate bars chopped or chips (175g)
Frosting:
⅛ c unsalted butter, room temperature (28g)
¼ c cream cheese softened (56g)
1 c powdered sugar, sifted (120g)
¼ c unsweetened cocoa powder spooned and levelled (21g)
1-2 tablespoons milk
Directions:
To Make the Dough:
Step 1: Add the milk, yeast, and sugar into a large mixing bowl. Beat until well combined.
Step 2: Allow the mixture to rest at room temperature for about 5 to 10 minutes.
Step 3: Add the butter, salt, and eggs. Whisk until well combined.
Step 4: Add 3 1/2 cups of flour and beat until well combined and sticky.
Step 5: Knead the dough for 5 minutes, then put it into a greased bowl.
Step 6: Spray with cooking spray on top of the dough.
Step 7: Cover the dough with a dry towel and allow it to rest for 10 minutes.
To Make the Filling:
Step 1: Add the cocoa, cinnamon, and brown sugar into a small mixing bowl. Stir until well combined.
Step 2: Prepare the oven and preheat to 100 degrees C or 200 degrees F.
Step 3: Line with parchment paper a baking sheet.
Step 4: Put the dough in a 20×18-inch. Roll and spread butter on top. Make sure to leave a 1-inch space at the end of the dough.
Step 5: Add chocolate and sprinkle sugar mixture on top.
Step 6: Roll up the dough and slice it into 12 even cuts.
Step 7: Arrange them onto the prepared baking sheet.
Step 8: Unplug the oven and place the baking sheet inside. Allow the rolls to sit for 30 minutes to rise.
Step 9: Remove from the oven and let them sit at room temperature.
Step 10: Preheat the oven to 190 degrees C.
Step 11: Put the rolls back to the oven and bake for 20 minutes or until done.
To Make the Frosting:
Step 1: Add the cream cheese and butter into a medium mixing bowl. Beat until well blended.
Step 2: Add the powdered sugar and beat until well mixed.
Step 3: Add the milk and cocoa gradually. Make sure to beat every addition.
Step 4: Allow the rolls to cool for 10 minutes, then spread the frosting on top of each roll.
Step 5: Serve and enjoy!
