The best meatloaf there is! This Pioneer Woman Meatloaf is my new favourite. Serve this with mashed potatoes and mixed veggies, and you have yourself a meal to remember! Oh, man, you are so in for a treat. Enjoy!
Ingredients:
Meatloaf:
12 slices thin-cut bacon
2 lbs. ground beef, 80% lean
4 whole eggs, beaten
6 slices White Bread
1/4 tsp seasoned salt
1 c whole milk
1 c Parmesan cheese, freshly grated
1/3 c fresh parsley, minced
3/4 tsp salt
Freshly ground black pepper
Sauce:
1 dash tabasco sauce
1+1/2 c ketchup
1/3 c brown sugar
1 tsp dry mustard
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. In a large mixing bowl, add the bread.
3. Pour the milk over the bread and let them sit for at least 5 minutes.
4. Add the rest of the ingredients for the meatloaf into the bowl with the soaked bread. Use your clean hands to mix everything until well combined. Make sure not to overmix.
5. Line with aluminium foil a baking pan.
6. Shape the mixture into a meatloaf, then transfer it into the prepared baking pan and let the grease drain.
7. Arrange the bacon slice over the meatloaf, then tuck both ends to the bottom of the meatloaf.
8. In a mixing bowl, add all the ingredients for the sauce. Stir until well blended.
9. Brush about 1/3 of the sauce on top of the meatloaf.
10. Place it inside the preheated oven and bake for about 45 minutes.
11. Remove from the oven, then brush the rest of the sauce on top.
12. Bake for 25 more minutes or until done.
13. Remove from the oven and let the meatloaf rest for about 10 minutes at room temperature.
14. Serve with the rest of the sauce. Enjoy!
