This was by far the best cake I have ever tried! Oh, man, you need to give it a try! Feel free to add more ingredients if you feel like it. I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go. Enjoy!
3 c all-purpose flour
1 tablespoon baking powder
¾ teaspoon salt
3 c sugar
1 c unsalted butter, room temperature
½ c shortening, room temperature
5 large Eggs
1 c whole milk
6 tablespoons lemon juice
1 lemon, ½ zested
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray and sprinkle flour in two loaf pans.
Step 3: In a medium mixing bowl, sift together the baking powder, flour, and salt.
Step 4: In the bowl of an electric mixer, add the butter, sugar, and shortening. Beat until creamy.
Step 5: Add the eggs gradually and beat every addition.
Step 6: Add the flour mixture and milk into the butter mixture alternately, then beat every addition.
Step 7: Add the lemon zest and juice. Beat until blended.
Step 8: Transfer the batter into the greased pans and spread it evenly.
Step 9: Place the pans inside the preheated oven and bake for 55 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 10: Remove from the oven and allow the cakes to cool at room temperature for about 15 minutes.
Step 11: Serve and enjoy!
1. Make sure that when you add the batter into the pan, do not overfill them. The batter will pop out once baked.
2. Bake any leftover batter.
